A Father’s Day Treat!

Happy Father’s Day to all the wonderful fathers out there!  Especially to my guy who has made the last 18 years so great!  He deserves to be spoiled today!

So with that in mind, I decided to make one of his favorite pies… Fresh rhubarb!  Last weekend when we went to the lake, Mom had a bunch of fresh rhubarb that I brought home just for this purpose! :)  

My mom usually makes this pie for him, using a recipe from an old book that my grandmother had.  This book was actually published in 1930 and from the looks of it, was used a lot!  I know she was known to be a really good cook, and I know my family LOVES the rhubarb pie recipe, so I copied it down and brought it home!

This recipe is so simple!

I washed and chopped the rhubarb.  

Combine it with flour, 1 egg, and sugar…  Lots of sugar.. (but soooo good!)

Put the rhubarb mixture in the pie crust (okay.. I cheated and used store-bought!!  But a girl can only do so much! :) )

Cover with the second crust, brush with milk and sprinkle with sugar, then bake!  

Really so easy!

 

I can’t wait until we have this tonight!   (Maybe with a scoop or two of vanilla ice cream!)  I am sure it will be a hit with everyone at our house!

Easy Fresh Rhubarb Pie

Ingredients
3 1/2 C fresh rhubarb, washed and chopped in 1 inch pieces
6 T flour
1 1/4 C sugar
1 egg
2 pie crusts
Instructions
Cut washed rhubarb in 1 inch pieces and measure. Pour into mixing bowl. Add flour, sugar, and slightly beaten egg.
Stir until combined.
Pour rhubarb into prepared 9 inch pie shell and cover with top crust where vents have been cut.
Press edges together, flute and trim.
Brush top crust with milk and sprinkle with sugar.
Bake at 425 for 35-45 minutes

What a Great Mini Vacation!

What a great, long weekend I just had!  This is just what I LOVE about summer!  Pat and I left Wednesday night and spent the rest of the week and weekend at the lake!  We had gorgeous weather and it was such a wonderful mini-vacation!  It is my most favorite place in the world to be!

Tommy, my son, took a day of vacation and drove up from Cincinnati to spend the weekend with us.  And my daughter Amy and her boyfriend Colin also came for a couple of days!  So being there with my mom and my kids was perfect!  Bear was loving the lake and sunshine too!

 

Thursday night my mom, Pat, Tommy, and I headed over to try the newest restaurant/bar that has opened right on the lake.  Mad Anthony’s has been in Fort Wayne for quite a while, but this one on Lake James, just opened about 3 weeks ago.  We were excited to try it, and we had a great time having dinner on their patio!  I am not a big beer drinker, but I tried their Gabby Blonde Ale and it was great!  We will definitely be going back!

  

My son loves to fish.  And before this weekend, I probably hadn’t fished in 25 years!  In the last few years, I had gone out in the boat with him while he fished, but I had been just a spectator, just keeping him company. He mostly has done bass fishing but this weekend he decided to fish for blue gill and perch.  This the low-key kind of fishing that just needs a worm, hook, and bobber.  You cast out into the water and just wait for a fish to take the bait.  After thinking about it, I decided to get a fishing license and go out with him the next morning.  (of course I checked with him first to make sure he didn’t mind his old mom tagging along!)

We got up about 7:00 Friday morning and armed with a pole, we headed out to the fishing boat.  First I have to say this fishing boat is just a basic 12 foot aluminum boat with a 9 horse motor.  The boat is older than I am, and the motor is probably almost as old!  No fancy fishing boat for us!

Well the first sight that greeted us as we headed out to the lake were these two Sandhill Cranes sauntering across our front yard!  These birds are huge!  

Well, after our morning “greeters”, we hopped in the boat and headed over near Pokagon State Park to try our luck.  As we got over to the area, we saw a mother deer and her baby drinking from the lake.  The fawn was so small!

The mother noticed us and stepped in front of her fawn as if to hide him, then they ran off into the woods.  But that was so amazing to see! 

Tommy and I anchored and fished there for a while and moved to a few other locations.  

When we came back that morning we went by our neighbor’s raft and there was a really cool heron sitting there.  

We see these often at the lake and we always pretend it is the same one… :) We have named him Clyde.  (When there are two they are Clyde and Henrietta).  Here is Clyde, sunning himself on the raft! :)

The next morning, we were up early again,  and while we didn’t see all the neat wildlife, the lake was like glass!

It was kind of chilly though!  In the above picture, there was steam coming off the water since the air was so cold!  

We caught about ten “keepers” in all, for the three mornings we fished.  I probably caught three of them.  I really enjoyed fishing after all these years!  And seeing all the wildlife and the calm lake before everyone is out boating.  But most of all I enjoyed the time just talking with my son!  I hope he will let me tag along again!

This mini vacation is just what I needed.  I didn’t knit at all, but sun, time with family, and catching a few fish was perfect for relaxing!

A Weekend Wedding!

June is the month for weddings.  I have always heard that.  And I’ve seen it too.  Since growing up, our family spent all of our summer weekends at the lake, and June weddings often meant missing our lake weekend.  So I remember them well.  I guess it makes sense that June would be a good month to have a wedding.  In Ohio, June is the first month you can count on pretty warm and sunny weather… at least most of the time.

This morning we had rain, but right now the sky is blue and it is so sunny… and we are going to a wedding.  And not just any wedding.  This is the marriage of my daughter Amy’s, best friend.  It is hard to believe that these girls are now at the age to be starting their lives as married women.  

I suppose I should be getting used to it.  Three of my son’s best friends are now married, and this will be the third of my daughter’s friends.  But I can’t help being nostalgic when I think of it.

Amy and Angie (the bride today) have been friends since the 2nd grade.  They’ve lived just across the street from each other, and were even roommates in college.  I think you could say they are as close as sisters.  And living so close, I’ve watched Angie grow up as if she were my daughter.  Amy and Angie2

I remember the days the she would run across the street (Angie would rather run than walk any day!) right in our front door and straight up to Amy’s room.  There they would laugh at the fun things they had done or seen, console each other in times of heartache, or make plans for their next great adventure.  Angie was always the one who planned birthday surprises for Amy that sometimes involved cute gifts left at our front door.  She has such a big heart and Amy has been blessed to have her as a friend.

So today, Angie will become a married woman.  And Amy will be her maid of honor.  Where did the time go?  How can my daughter be old enough to have so many married friends?  How can I be old enough to have a daughter old enough to have so many married friends? (Ha!) Sometimes I wish I could go back in time and they would be the little girls giggling up in Amy’s room.        

But this is life, and this is what is meant to be.

Today, I will probably have a few tears as I watch my daughter’s best friend walk down the aisle.  But they will be happy tears!

TGIF! Happy Memorial Day Weekend!

Thank goodness it’s Friday!  This week seemed to drag on forever!  But it’s finally the weekend, and a LONG weekend at that!

Yesterday I got a note in the mail that there was a registered package for me at the Post Office.  So today I stopped over there at lunch and GUESS WHAT?  My friend Maryanne at Woolhogs sent me some gorgeous yarn as a prize in a giveaway she had a few weeks ago!  Imagine my surprise to first, receive a package from South Africa!  And then to open in and see this gorgeous yarn!

Thank you so much Maryanne!  I can’t wait to do something with it.  I’ll definitely be posting my decision and finished project.

For now, I am packing and off to the lake for this marvelous long weekend!  it is supposed to be a bit cool (high in the 60′s) but sunny the whole time!  I expect boat rides, yard work, great food, and lots of fun with my family!  Both of my kids will be there and when we are all together there are always a LOT of laughs!

I’m packing my Kindle (of course), and my latest knitting project.  I loved my last Truckee Shawlette so much I got some more spring colored yarn and I’m making another one!  What do you think?

The lightweight yarn is just perfect for knitting with this time of year.  I am using Malabrigo Lace Superwash Solis and Water Green.  I love the color combination and this one shows the stripes much more than my previous one.  So that is probably my primary project for the weekend.  

I am also bringing some other DK weight yarn just in case I want to start my first knit bunny.  I just bought these two bunny patterns from Little Cotton Rabbits.  I have admired Julie’s knit animal toys for months and she just recently decided to sell the patterns.  Well I was ecstatic and rushed to buy her first two.  So needless to say I am VERY excited to try my first one!  I’m not sure I will start this weekend but I am bringing it just in case!

On my Kindle, I am reading The Inn at Rose Harbor by Debbie Macomber.  I am flying through it and it is so good!  In the summer I love to read light, sentimental books (Good beach/lake reading!)  This one is about a woman who opens an Inn around Puget Sound.. and guess what? In her free time she loves to KNIT!  And has multiple projects going at any one time!  I think I can identify with that!  Anyway, I am enjoying it and already queueing up the next book!  It is good to be prepared on these long weekends!  Ha! ha! 

The main thing I am looking forward to, though, is spending time at the lake with my family!
